Helper Vacuum Dough Mixer for Proofed Products
The Helper Vacuum Dough Mixer for proofed products is independently developed by our company, specifically designed for the production of Chinese steamed buns (baozi) and mantou. This temperature-controlled vacuum dough mixer is tailored to the characteristics of these traditional dough products.
The YT stirring shaft simulates manual kneading by thoroughly mixing dough, sugar, and oil, ensuring even distribution and achieving a hand-kneaded effect. The dough is mixed under vacuum conditions, allowing the proteins in the flour to fully absorb water in a short time, forming an optimal gluten network. The resulting dough is smooth, with excellent elasticity and tensile strength.
Buns and mantou produced using this machine have a finer, glossier surface and more uniform internal structure. After steaming, the buns and mantou maintain their shape without collapsing.
The machine is equipped with a cooling system that allows the dough temperature to be adjusted between 5°C and 25°C according to the specific requirements of buns and mantou, ensuring consistent product quality.
This is a fully automatic vacuum dough mixer. The top of the dough box is equipped with an automatic water inlet and automatic flour addition port, which can be connected to external automatic water and flour feeding systems (optional). This further improves production efficiency and reduces labor costs.
