From vacuum dough mixing to rolling, resting, cutting, cooking, cooling, and air-blowing, the entire line operates automatically, ensuring smooth texture, elasticity, high efficiency, and food safety for industrial-scale production.
The production line consists of the following key equipment:
Vacuum Dough Mixer: Mixes flour and water thoroughly, forming an ideal gluten network for elastic noodles.
Automatic Dough Resting & Maturation Unit: Allows dough to rest and mature, improving noodle texture and stretchability.
Compound Rolling Unit: Uses multiple transverse corrugated rollers to mimic manual rolling, producing evenly thick and naturally extended dough sheets.
Grouped Automatic Rolling Unit: Works with specially designed cutting knives for frequency-controlled cutting and portioning, achieving precise noodle width and size.
Automatic Resting / Fermentation Box: Provides controlled temperature and humidity for optimal dough resting, ensuring elasticity and smooth texture.
Automatic Cooking Kettle: Uniformly cooks noodles, combined with cooling and air-blowing to extend shelf life of frozen noodles.
The entire line operates automatically with FIFO (first-in, first-out) material handling, and integrated control systems eliminate manual contact. Each process is data-controlled to ensure standardized production and high-quality output.
