I. General Core Working Process
Power transmission: The motor reduces speed and increases torque through transmission structures such as gears, belts, and wormgear assemblies. It converts the highspeed rotation of the motor into lowspeed, hightorque power suitable for doughpressing components.
Dough rolling: Power drives pressing rollers or extrusion components to operate, applying continuous mechanical pressure to the dough to gradually reduce its thickness and optimize the gluten structure.
Shaping and output: Dough processed through multiple procedures undergoes final shaping by cutting blades or dies, and finished uniform dough sheets or noodles are discharged.
II. Principles of Mainstream Machine Types
Rollertype dough sheeter (mainstream for household and commercial use) Multiple sets of parallel pressing rollers rotate in opposite directions, with roller gaps decreasing stepbystep. Dough is gradually rolled from an initial coarse thickness of 58 mm into thin dough sheets of 0.53 mm. Some models are equipped with corrugated coarsepressing rollers to break the gluten network first, simulating the effect of manual kneading and beating. Smooth pressing rollers perform fine rolling afterwards. The adjustment accuracy for doughsheet thickness can reach 0.1 mm.
Screwextrusion dough sheeter A screw rotates inside the barrel to push dough forward. Subjected to continuous pressure within the confined space, dough is extruded directly through dies with specific orifices. Noodles of round, flat and other shapes are formed in one step without additional cutting procedures.

After users set parameters such as doughsheet diameter, thickness and pressing speed on the touch screen, the machine automatically completes the whole process including dough mixing, dough resting, multistage roller pressing and shaping without manual intervention.
